Seafood Salad

This recipe is one I was taught by Izzy’s family, the Daggs. I have added bits and pieces to it, as can you. It is a great salad when feeding a large group of people. Every Christmas I make this salad and it feeds a fair few. I often get asked for this recipe and it’s almost embarrassing to tell people because it’s so easy to make. But hey, when you’re cooking for bulk, it’s a winner! Preparation Time: 10 minutes • Cooking Time: 10 minutes • Serves 10+ 500g packet shell pasta Olive oil Salt and pepper ½ red onion, chopped 2 tomatoes, diced 2 spring onions, chopped 1 cup chopped Italian parsley 500g surimi (frozen or fresh), chopped 300g small prawns or shrimps Cajun seasoning 400ml bottle Thousand Island dressing Handful of chopped Italian parsley, to garnish Method: Bring a large pot of water to the boil. Izzy’s Salmon Scramble

Scrambled eggs are a staple in the Kiwi diet and are so easy to make. Izzy always gets the Salmon Scramble at one of our favourite breakfast locations in Christchurch: Jagz at Styx Mill. As much as he loves the restaurant’s Salmon Scramble, he decided to give it a go himself and became obsessed. You can put this meal on any type of bread, but there’s nothing like toasted Vogel’s! Preparation Time: 5 minutes • Cooking Time: 5 minutes • Serves 2 6 large free-range eggs ¼ cup milk 1 spring onion 1 tomato ¼ red onion 100g smoked salmon ¼ cup grated Parmesan salt and pepper 1 tablespoon butter 4 pieces Vogel’s toast 4 teaspoons cream cheese 1 avocado, sliced Method: Crack the eggs into a large mixing bowl and lightly beat them with the milk. Finely slice the spring onion, dice the tomato and finely chop the red onion and add these to the egg mixture. Cut the smoked salmon into small pieces and add to the mixture along with the Parmesan. Blueberry Pancakes with Caramelised Banana & Maple Bacon

Pancakes have got to be one of our favourite things to eat – and it was the first thing I learnt to cook at age eight! This recipe is simple to make and always turns out delicious. Preparation time: 5 minutes • Cooking time: 15 minutes • Serves 4 1½ cups plain flour 3½ teaspoons baking powder 1 teaspoon salt 1 tablespoon white sugar 1¼ cups milk 3 tablespoons unsalted butter, melted 1 free-range egg Clarified butter (or coconut oil), for cooking 125g blueberries 250g streaky bacon (or 3 rashers per person) 4 tablespoons Canadian maple syrup 2 bananas 1 tablespoon brown sugar Dusting of cinnamon Method: Into a large bowl, sift the flour, baking powder, salt and sugar. Make a well in the centre and slowly add the milk, melted butter and egg. Whisk until smooth and pour into a jug. Heat some butter or coconut oil in a frying pan on medium to high heat. White Choc and Macadamia Cookies

This is such an easy recipe which doesn’t require fancy equipment and just a bit of elbow grease! You can add whatever you like to the dough (Choc chips, cranberries, nuts) to please every palate. Makes about 18 biscuits You’ll need- 125g room temp butter 1/2 cup white sugar 1/2 cup soft brown sugar 1 room temp egg 1 teaspoon vanilla essence 1 1/4 cups plain flour 1 tablespoon corn flour 1/2 teaspoon baking soda 1/2 teaspoon salt 3/4 cup white choc chips 1/2 cup chopped macadamias Preheat your oven to 180 bake and line 2 trays with baking paper. Using just a large bowl and a spoon or hard spatula, cream your butter with the 2 sugars until a light brown mixture forms. Add your egg and vanilla and mix well. Sift in the flour, cornflour, salt and baking soda and stir together until a soft dough forms. Add your nuts and white choc and stir to combine. Chia Seed Porridge

I got this fantastic wee recipe from my sister Laura who made it for me when I last visited in Auckland. It was so good and so easy I have been making it most days for lunch!! With the winter chills fully setting in this porridge is a great and very healthy way to warm up ya tummies!! Good for the kiddies too! Prep time- 2 minutes (30 min to soak) Cooking time – 2 minutes Serves – 2 people Ingredients 1/2 cup rolled oats 1 1/2 tablespoons chia seeds 1 1/2 cups boiling water 1 tbsp LSA 2 tbsp shredded coconut 2 tbsp dried apricots (chopped) 2 tbsp dried cranberries 1/2 cup of either milk, almond milk or cream 2 tbsp runny honey 1 banana Method In a microwave safe bowl soak the oats and chia seeds in boiling water for 30 minutes. Water should be sitting around a thumb nail above oats and chia. When all water has been absorbed, cook in microwave for 2 minutes. Add LSA, coconut and dried fruit and mix …

I’m putting it out there but I actually think ravioli is my favourite food! Again this recipe uses dumpling wrappers as a cheat which helps make preparing an entree super quick!! Wild Duck & Mushroom Ravioli Preparation time- 15 minutes Cooking Time – 5 minutes Makes – 12 ravioli (serves 4 people as an entrée) Ingredients 24 dumpling wrappers 1 duck breast 4 button mushrooms ½ onion 1 tsp. chicken salt ½ tsp. smoked paprika 3 tbsp. olive oil Salt & pepper 1 egg (for egg wash) 1 pastry brush Sauce 2 tomatoes (fresh) ½ can chopped tomatoes ½ cup basil leaves 3 tbsp. olive oil ¼ cup cream ½ tsp. ground turmeric ½ tsp. cayenne pepper (for added heat) Salt & Pepper ¼ cup Parmesan cheese Method Chop duck up into tiny pieces and finely chop button mushrooms and onion. Hello lovley people. Izzy and I have been having a bit of chill time in Gizzy where he has been on a few hunting trips. We were lucky enough to return home with a huge bag full of venison steaks, sausys and patties. So here comes a lovely venny dinner for you hunters out there! Venison with Roast Veggies & Red Wine Jus Preparation Time – 15 minutes Cooking Time – 30 minutes Serves – 2 people Ingredients 4 x 150g venison steaks 1 tbsp. butter 2 cups fresh spinach 2 large potatoes 1 large kumara ½ onion Salt & pepper Olive oil Red Wine Jus 2 cloves garlic, crushed 1 tablespoon butter 1 cup red wine 1/2 cup soy sauce 1 tablespoon brown sugar 2 tablespoons sweet chilli sauce 1/2 cup water Salt and pepper Method Prepare the roast vegies by peeling and cutting into small bite size pieces. Beef burgers with Onion rings and Chunky Fries

Nothing better then a tasty burger with super juicy and tender patties! This version is so easy to prepare and is a nice treat for a mid week meal. For the patties- 800g beef mince 1 brown onion, grated 1 egg 1 teaspoon minced garlic Handful of chopped italian parsley 2 tablespoons worchester sauce 1 cup of breadcrumbs (I used Panko) Big sprinkle of salt and pepper For the onion rings- 1 brown onion, cut into 1cm slices and separated 1 cup of soda water 1/2 cup self raising flour 1 teaspoon garlic salt Canola oil for frying For the chips- 4 large potatoes, cleaned and sliced but with skin left on 1 tablespoon olive oil To serve- 8 brioche or sesame burger buns Iceberg lettuce, washed and trimmed 2 tomatoes, sliced Brie cheese, sliced Smokey BBq sauce Garlic aioli To make the patties, combine all the ingredients in a large bowl and mix together with clean hands. Due to the chilly weather conditions around NZ at the moment, this is a repost for all you special people and my absolute favourite soup! Keep warm!!! Roasted Pumpkin Soup Preparation Time: 10 minutes Cooking Time: 55 minutes Serves 4 1kg buttercup (or other) pumpkin 2 potatoes 2 tablespoons olive oil 1 tablespoon garlic and herb salt 1 onion, finely sliced 2 cloves garlic, crushed 30g butter 2 cups chicken stock 1 cup milk 1/2 cup coconut cream 1 teaspoon salt 1 teaspoon pepper 4 rashers bacon 1/4 cup Parmesan 5 leaves fresh basil, chopped Preheat the oven to 180°C. Carefully slice the skin off the pumpkin and cut into medium-sized pieces. Peel the potatoes and cut into similar sized pieces as the pumpkin. Drizzle with olive oil, season with garlic and herb salt and place in the oven to cook for 45 minutes. Place the onion, garlic and butter in a non-stick frying pan and cook for about 5 minutes or until onion softens. When pumpkin and potatoes are cooked remove from oven, cool …
