Wild Duck & Mushroom Ravioli

I’m putting it out there but I actually think ravioli is my favourite food! Again this recipe uses dumpling wrappers as a cheat which helps make preparing an entree super quick!! Wild Duck & Mushroom Ravioli Preparation time- 15 minutes Cooking Time – 5 minutes Makes – 12 ravioli (serves 4 people as an entrée) Ingredients 24 dumpling wrappers 1 duck breast 4 button mushrooms ½ onion 1 tsp. chicken salt ½ tsp. smoked paprika 3 tbsp. olive oil Salt & pepper 1 egg (for egg wash) 1 pastry brush Sauce 2 tomatoes (fresh) ½ can chopped tomatoes ½ cup basil leaves 3 tbsp. olive oil ¼ cup cream ½ tsp. ground turmeric ½ tsp. cayenne pepper (for added heat) Salt & Pepper ¼ cup Parmesan cheese Method Chop duck up into tiny pieces and finely chop button mushrooms and onion. Wild Duck Casserole

One of the first things I learnt as a kid was how to pluck and gut a duck. They are so tasty but hugely pricey in the supermarket so if your men/ladies are going out shooting, make sure they bring the ducks home! Preparation Time: 15 minutes Cooking Time: 2 hours Serves: 5 people Ingredients 1 duck ½ cup soup lentil mix 2 onions 4 rashers bacon 2 tbsp. chopped rosemary leaves 2 cloves of garlic (crushed) 1 tbsp. butter 1 bay leaf 1 red pepper 3 tomatoes 2 tbsp. brown sugar 12 button mushrooms (halved) 3 tbsp. olive oil 2 glasses red wine 1 tbsp. corn flour Salt & Pepper Method Pre-heat oven to fan bake 180 degrees. In a large saucepan add duck, and lentil mix and cover with water. Leave to boil for 1 hour on a medium heat until duck has tenderised. Remove from heat.
