Chia Seed Porridge

I got this fantastic wee recipe from my sister Laura who made it for me when I last visited in Auckland. It was so good and so easy I have been making it most days for lunch!! With the winter chills fully setting in this porridge is a great and very healthy way to warm up ya tummies!! Good for the kiddies too! Prep time- 2 minutes (30 min to soak) Cooking time – 2 minutes Serves – 2 people Ingredients 1/2 cup rolled oats 1 1/2 tablespoons chia seeds 1 1/2 cups boiling water 1 tbsp LSA 2 tbsp shredded coconut 2 tbsp dried apricots (chopped) 2 tbsp dried cranberries 1/2 cup of either milk, almond milk or cream 2 tbsp runny honey 1 banana Method In a microwave safe bowl soak the oats and chia seeds in boiling water for 30 minutes. Water should be sitting around a thumb nail above oats and chia. When all water has been absorbed, cook in microwave for 2 minutes. Add LSA, coconut and dried fruit and mix …
