The lovely pizza dough recipe on page 186 comes direct from my dad Roland, who runs gluten-free bakery Dovedale Bread. While they’re not gluten free, they make for mighty fine pizzas. So have a go at making the pizza bases yourself or you can use shop-bought ones. Here are three of our favourite toppings . . . Preparation time: 30 minutes • Cooking time: 30 minutes • Serves 6 Gambretti (chilli prawns) 400g raw prawns 1 tablespoon olive oil 1 red chilli, finely chopped 3 cloves garlic, chopped Pizza sauce 1 cup grated Parmesan 1 lemon, halved Salt and pepper Handful of baby rocket leaves Method: In a frying pan, sauté the prawns in olive oil and add the chilli and garlic, stirring until the prawns are mostly cooked through. Spread pizza sauce on each pizza base, top with the prawns, Parmesan, and the juice from one lemon half, seasoning well, before cooking in a hot oven (about 230°C) for 12–15 minutes. This recipe is one I was taught by Izzy’s family, the Daggs. I have added bits and pieces to it, as can you. It is a great salad when feeding a large group of people. Every Christmas I make this salad and it feeds a fair few. I often get asked for this recipe and it’s almost embarrassing to tell people because it’s so easy to make. But hey, when you’re cooking for bulk, it’s a winner! Preparation Time: 10 minutes • Cooking Time: 10 minutes • Serves 10+ 500g packet shell pasta Olive oil Salt and pepper ½ red onion, chopped 2 tomatoes, diced 2 spring onions, chopped 1 cup chopped Italian parsley 500g surimi (frozen or fresh), chopped 300g small prawns or shrimps Cajun seasoning 400ml bottle Thousand Island dressing Handful of chopped Italian parsley, to garnish Method: Bring a large pot of water to the boil. Roasted Pumpkin Soup

Izzy only eats one kind of soup (pumpkin) and he loves it for lunch or an entrée. There are many soup recipes out there, but the roast flavours of this simple soup are delicious and warming. Serve hot with some freshly made garlic bread and you won’t find much better on a cold winter’s day. Preparation Time: 10 minutes • Cooking Time: 55 minutes • Serves 4 1kg buttercup (or other) pumpkin 2 potatoes 2 tablespoons olive oil 1 tablespoon garlic and herb salt 1 onion, finely sliced 2 cloves garlic, crushed 30g butter 2 cups chicken stock 1 cup milk ½ cup coconut cream 1 teaspoon salt 1 teaspoon pepper 4 rashers bacon ¼ cup Parmesan 5 leaves fresh basil, chopped Method: Preheat the oven to 180°C. There is nothing quite like a good steak sammy to treat the taste buds. It is often a meal on a lunch menu at a café or restaurant, but they are so simple to make at home. The basil pesto sauce that goes with this sandwich adds a beautiful fresh fragrant flavour. Preparation Time: 5 minutes • Cooking Time: 10 minutes • Serves 4 1 onion, finely sliced 1 tablespoon butter 1 tablespoon soy sauce 4 free-range eggs ¼ cucumber 2 tomatoes 1 avocado 4 steaks salt and pepper olive oil 60g brie Fresh loaf of bread (tiger or ciabatta, preferably) 2 tablespoons mayonnaise 1 cup shredded lettuce Basil Pesto Sauce (see page 180 in The Rugby Pantry Book. I got this fantastic wee recipe from my sister Laura who made it for me when I last visited in Auckland. It was so good and so easy I have been making it most days for lunch!! With the winter chills fully setting in this porridge is a great and very healthy way to warm up ya tummies!! Good for the kiddies too! Prep time- 2 minutes (30 min to soak) Cooking time – 2 minutes Serves – 2 people Ingredients 1/2 cup rolled oats 1 1/2 tablespoons chia seeds 1 1/2 cups boiling water 1 tbsp LSA 2 tbsp shredded coconut 2 tbsp dried apricots (chopped) 2 tbsp dried cranberries 1/2 cup of either milk, almond milk or cream 2 tbsp runny honey 1 banana Method In a microwave safe bowl soak the oats and chia seeds in boiling water for 30 minutes. Beef burgers with Onion rings and Chunky Fries

Nothing better then a tasty burger with super juicy and tender patties! This version is so easy to prepare and is a nice treat for a mid week meal. For the patties- 800g beef mince 1 brown onion, grated 1 egg 1 teaspoon minced garlic Handful of chopped italian parsley 2 tablespoons worchester sauce 1 cup of breadcrumbs (I used Panko) Big sprinkle of salt and pepper For the onion rings- 1 brown onion, cut into 1cm slices and separated 1 cup of soda water 1/2 cup self raising flour 1 teaspoon garlic salt Canola oil for frying For the chips- 4 large potatoes, cleaned and sliced but with skin left on 1 tablespoon olive oil To serve- 8 brioche or sesame burger buns Iceberg lettuce, washed and trimmed 2 tomatoes, sliced Brie cheese, sliced Smokey BBq sauce Garlic aioli To make the patties, combine all the ingredients in a large bowl and mix together with clean hands. Sashimi with Avocado Purée and Tamarillo Salsa

We were lucky enough to receive a lovely box of these beautiful tree tomatoes from our friends at Tasty Tamarillos. Tamarillos are low in calories and provide good dietary fibre, vitamins and antioxidants. This recipe is an absolutely stunning entree and very easy to put together. If you don’t like raw fish by all means pan fry a beautiful piece of salmon, tuna or fish as a replacement. Ingredients Fish Around 100g each of salmon, tuna loin and a nice buttery white fish (butterfish, monk fish, tarakihi, snapper) Avocado Purée 1 ripe avocado 2 tbsp sour cream 1 tbsp high quality olive oil 1/2 limes juice Pinch of salt & pepper Tamarillo Salsa 1 Tamarillo (peeled) 3 cherry tomatoes 1/4 red onion 4 basil leaves 1/4 red chilli (deseeded) 1/2 lime juice Method For the fish – skin and bone if needed and cut into slices approximately 0.60cm thick. Quesadillas, Wrap Sushi, Banana & Choccy Wrap

Last week for kiddies lunch ideas it was ways with pizzas and this week it’s ways with wraps! Great options for kids lunch boxes or after school snacks. Despite the last one containing Nutella it is soooo yummy and one of my favs! Quesadillas A fabulous Mexican snack! Ingredients 2 wraps 10 slices shaved ham 1/2 cup grated cheese 3 tbsp plum sauce (or any sauce you love) Method Set oven to 180 degrees fa bake. Spoon plum sauce over one wrap and add slices of shaved ham and cheese. Place other wrap over the top and cook for 10 minutes or until slightly browned. Cut into 4 pieces and place in tinfoil to keep warm! Wrap Sushi Great way to get alfalfa sprouts in the kiddies tummies! Ingredients 1 wrap 8 slices shaved ham 1/4 alfalfa sprouts 1tbsp mayonnaise 1tbsp plum sauce (or any sauce you love) Method Heat wrap in the microwave for 30 seconds. Spoon over mayo and plum sauce. Pita Pizzas

Simple, quick mini pizzas that are delicious. Most kids love pizzas so these are winners! Prep time – 4 minutes Cooking time – 10 min Ingredients 4 pita breads 50 g tomato pizza paste 1/2 onion 10 Cherry tomatoes 50g ham (sliced) 1/2 cup grated cheese Salt Basil to garnish Method Pre heat oven fan bake to 180 degrees. Spoon paste evenly over 4 pita breads. Add sliced cherry tomatoes, thinly sliced onion and small chopped up pieces of sliced ham. Cover in grated cheese and add a dash of salt. Cook for 10 minutes then remove from oven. Place pieces of fresh basil over the top then wrap up in tinfoil to keep warm and place in lunchbox!

Mummas Meat Loaf

This was an absolute favourite meal of mine growing up and it was in my mums red recipe book.You can add any veges, herbs or spices to it that you want. Preparation Time: 10 minutes Cooking Time: 25 minutes Serves 4 Ingredients 500g lean beef mince 450g sausage meat 1/2 cup fresh breadcrumbs 1 onion, chopped 1 teaspoon curry powder 1 teaspoon smoked paprika 1 cup chopped fresh spinach 1/2 cup chopped fresh parsley and basil Glaze 1/4 cup water 1 tablespoon Worcestershire sauce 1 tablespoon lemon juice 2 tablespoons brown sugar 1/4 cup tomato sauce 1 tablespoon olive oil 1 tablespoon malt vinegar 2 teaspoons cornflour Method Combine all meatloaf ingredients in a food processor and blend together. (If you do not have a food processor, use your hands.) Grease a microwave-proof baking dish and form the meat mixture into a loaf. Cover with a paper towel and microwave on high for 10 minutes.
