Wraps - V01

Quesadillas, Wrap Sushi, Banana & Choccy Wrap

Last week for kiddies lunch ideas it was ways with pizzas and this week it’s ways with wraps! Great options for kids lunch boxes or after school snacks. Despite the last one containing Nutella it is soooo yummy and one of my favs! Quesadillas A fabulous Mexican snack! Ingredients 2 wraps 10 slices shaved ham 1/2 cup grated cheese 3 tbsp plum sauce (or any sauce you love) Method Set oven to 180 degrees fa bake. Spoon plum sauce over one wrap and add slices of shaved ham and cheese. Place other wrap over the top and cook for 10 minutes or until slightly browned. Cut into 4 pieces and place in tinfoil to keep warm! Wrap Sushi Great way to get alfalfa sprouts in the kiddies tummies! Slow Cooked Moroccan Lamb Stew

Daisy has you covered with some great kids food, so here’s a delicious and super easy stew for the adults. It takes less then 20 minutes to chuck together and can be left in the slow cooker or just a big pot for 4+ hours. Perfect for those cold winter nights to come! You’ll need- 1kg of diced lamb (shoulder is a good choice) 5 tablespoons of Moroccan spice mix (4 over the lamb, 1 cooked with the onion) 1 cup of dried apricots OR dates, roughly chopped Large handful Italian parsley, diced Large handful coriander, diced 2 brown onions, grated or diced 3 garlic cloves, minced 1 tin of Watties Moroccan tomatoes 1 tin of whole or diced tomatoes in juice 2 cups of beef stock Salt and pepper Garnish- Sliced almonds More coriander Couscous- 2 cups of couscous 2 cups of chicken or beef stock 1 tablespoon olive oil 1 naval orange, sliced into segments Half a red onion, finely sliced Coriander leaves Greek yogurt to serve Begin by cutting your lamb into …

Pizza MUffin - V01

Pizza Muffins

These are fantastic muffins! Cook a whole batch or you can freeze them. They will be ready to eat by recess! Prep time – 5 min Cooking time – 14 min Makes 12 muffins Ingredients 2 cups self raising flour 1 onion (chopped finely) 1 capsicum (chopped finely) 75g sliced ham (chopped finely) 1/2 cup Edam cheese cubed 1 cup sour cream 50g butter (melted) 2 eggs 1 tsp salt 2 tbsp tomato paste 1/2 cup grated cheese (mozzarella or Edam) Method Preheat oven to fan bake 180 degrees. Grease 12 muffin cups with oil or butter. In a large bowl, mix together flour, salt, onion, capsicum, ham and cheese cubes. In a medium bowl, whisk together sour cream, eggs and melted butter until smooth. Stir into flour mixture just until well combined (batter will be very fairly thick). Spoon batter into muffin cups, dividing evenly. Spoon 2 tsp pizza sauce on top of each muffin and finely sprinkle each with grated cheese. Pita Pizzas

Simple, quick mini pizzas that are delicious. Most kids love pizzas so these are winners! Prep time – 4 minutes Cooking time – 10 min Ingredients 4 pita breads 50 g tomato pizza paste 1/2 onion 10 Cherry tomatoes 50g ham (sliced) 1/2 cup grated cheese Salt Basil to garnish Method Pre heat oven fan bake to 180 degrees. Spoon paste evenly over 4 pita breads. Add sliced cherry tomatoes, thinly sliced onion and small chopped up pieces of sliced ham. Cover in grated cheese and add a dash of salt. Cook for 10 minutes then remove from oven. Place pieces of fresh basil over the top then wrap up in tinfoil to keep warm and place in lunchbox!

Jazzy Apple Cake with Maple Sauce

Nothing better then a seasonal apple cake that’s full of moisture and flavor. Jazz Apples have a great taste and a good dose of antioxidants and minerals, making them a perfect pairing for this cake. The maple sauce takes it way over the edge of decadent but is too delicious to leave out. Full credit for this recipe goes to Tamara Milstein, as I’ve simply changed a few elements from her delicious method. Her book ‘bake your cake and eat it too!’ is a well loved family favorite that keeps on giving. Mummas Meat Loaf

This was an absolute favourite meal of mine growing up and it was in my mums red recipe book.You can add any veges, herbs or spices to it that you want. Preparation Time: 10 minutes Cooking Time: 25 minutes Serves 4 Ingredients 500g lean beef mince 450g sausage meat 1/2 cup fresh breadcrumbs 1 onion, chopped 1 teaspoon curry powder 1 teaspoon smoked paprika 1 cup chopped fresh spinach 1/2 cup chopped fresh parsley and basil Glaze 1/4 cup water 1 tablespoon Worcestershire sauce 1 tablespoon lemon juice 2 tablespoons brown sugar 1/4 cup tomato sauce 1 tablespoon olive oil 1 tablespoon malt vinegar 2 teaspoons cornflour Method Combine all meatloaf ingredients in a food processor and blend together. (If you do not have a food processor, use your hands.) Grease a microwave-proof baking dish and form the meat mixture into a loaf. Cover with a paper towel and microwave on high for 10 minutes. Wild Duck Casserole

One of the first things I learnt as a kid was how to pluck and gut a duck. They are so tasty but hugely pricey in the supermarket so if your men/ladies are going out shooting, make sure they bring the ducks home! Preparation Time: 15 minutes Cooking Time: 2 hours Serves: 5 people Ingredients 1 duck ½ cup soup lentil mix 2 onions 4 rashers bacon 2 tbsp. chopped rosemary leaves 2 cloves of garlic (crushed) 1 tbsp. butter 1 bay leaf 1 red pepper 3 tomatoes 2 tbsp. brown sugar 12 button mushrooms (halved) 3 tbsp. olive oil 2 glasses red wine 1 tbsp. corn flour Salt & Pepper Method Pre-heat oven to fan bake 180 degrees. In a large saucepan add duck, and lentil mix and cover with water. Leave to boil for 1 hour on a medium heat until duck has tenderised. Remove from heat. Salmon with Leek & Mushroom Risotto

Here is the second salmon risotto that I promised all you fine people. Salmon are such incredible fish and whilst we enjoy catching them we try to use every edible part of the salmon. They have to go on such an incredible journey just to breed so wasting any part would be a crime. I hope you are all keeping warm with this horrible weather! Preparation Time – 10 minutes Cooking Time – 30 minutes Serves – 4 people Ingredients 4 salmon fillets 1 ½ cups Arborio rice 1 ½ L chicken stock 12 button mushrooms 1 leek 1 onion 1 tbsp. crushed garlic 50 g butter ¼ cup Parmesan cheese Olive oil Salt & Pepper Method In a fry pan on medium heat add chopped onion, garlic and a slice of butter and cook for 2 minutes or until slightly browned. Chicken and Orange Kumara Chilli

This is one of my fave winter warmers and so filling. Orange kumara is a bit of an obsession in our household….so of course we’ve found yet another way to eat it Makes 4 bowls You’ll need- 2 large skinless chicken breasts (600g) 5 cups of chicken stock 2 large orange kumara, peeled and cubed 2 tablespoons of butter 1 large red chilli, diced 1 brown onion, diced 3 garlic cloves, minced Half a red capsicum, sliced Half a orange capsicum, sliced 1 teaspoon smoked paprika 1 teaspoon chilli powder Good sprinkle of flaky sea salt 1 tin of black beans, strained 1 tin of mexican tomatoes 3 tablespoons of chia seeds Small handful of chopped coriander Garnish- Crumbled goats feta Small handful of pumpkin seeds Coriander Place your chicken stock into a pot and bring to a rolling boil.
