Mummas Meat Loaf

Meatloaf - V04

This was an absolute favourite meal of mine growing up and it was in my mums red recipe book.You can add any veges, herbs or spices to it that you want.

Preparation Time: 10 minutes
Cooking Time: 25 minutes
Serves 4


500g lean beef mince
450g sausage meat
1/2 cup fresh breadcrumbs
1 onion, chopped
1 teaspoon curry powder
1 teaspoon smoked paprika
1 cup chopped fresh spinach
1/2 cup chopped fresh parsley and basil

1/4 cup water
1 tablespoon Worcestershire sauce
1 tablespoon lemon juice
2 tablespoons brown sugar
1/4 cup tomato sauce
1 tablespoon olive oil
1 tablespoon malt vinegar
2 teaspoons cornflour


Combine all meatloaf ingredients in a food processor and blend together. (If you do not have a food processor, use your hands.) Grease a microwave-proof baking dish and form the meat mixture into a loaf. Cover with a paper towel and microwave on high for 10 minutes.

Mix all glaze ingredients together in a bowl. Remove loaf from microwave and pour the glaze mixture over it. Microwave, uncovered, for a further 10 minutes. Several times during cooking, baste the meatloaf with the glaze from the baking dish.

Remove from the microwave, cover in tinfoil, and leave to sit for a further 5 minutes. Slice and serve hot, scooping remaining sauce out!
