Chia Seed Porridge

I got this fantastic wee recipe from my sister Laura who made it for me when I last visited in Auckland. It was so good and so easy I have been making it most days for lunch!!

With the winter chills fully setting in this porridge is a great and very healthy way to warm up ya tummies!! Good for the kiddies too!

Prep time- 2 minutes (30 min to soak)
Cooking time – 2 minutes
Serves – 2 people


1/2 cup rolled oats
1 1/2 tablespoons chia seeds
1 1/2 cups boiling water
1 tbsp LSA
2 tbsp shredded coconut
2 tbsp dried apricots (chopped)
2 tbsp dried cranberries
1/2 cup of either milk, almond milk or cream
2 tbsp runny honey
1 banana


In a microwave safe bowl soak the oats and chia seeds in boiling water for 30 minutes. Water should be sitting around a thumb nail above oats and chia.

When all water has been absorbed, cook in microwave for 2 minutes. Add LSA, coconut and dried fruit and mix until combined.

Add to serving bowls and pour over milk or cream, add sliced banana then drizzle over runny honey and serve hot!

(Could add fresh berries in summer)
